from the very start, she's been immune to psychic-based vampire powers. after she got turned, this got boosted into a wide-area psychic shield though initially she only had very limited range. when the Italian vampires came, she got a rage power-up that boosted the shield's range to be wide enough to cover all their allies but she finds out that it only protects people from attacks coming from outside the shield. she then figures out how to individually shield all their allies. mind you, both power-ups happen within a span of minutes.

the shield was enough to beat the Italians because their most powerful member has a psychic attack that causes great pain that incapacitates anyone its used on. the Italians were so used to their enemies not being able to fight back that they didn't know how to do a straight up fight and instead just backed off.

Was it ever explained why she was immune to psychic powers?

for the same reason why Cyclops was given the ability to shoot lasers out of his eyes or Kryptonians were given powers under a yellow sun. it's just what she can do.

it mystifies me why people are so preoccupied with why she's immune to psychics but no one seems to question why any of the other vampires have their powers.

Being a mutant, Kryptonian or vampire is unto itself an explaination for powers. Bella was described as an ordinary human who had this power.

So either I am totally being ripped off by my lack of ordinary human derived super powers or she needs some sort of explaination.

the books state that some of the vampire powers were supercharged versions of traits they had when they were still human. Edward was already highly intuitive when it came to what people were thinking and that became full-blown mind reading after being turned. it never bothered me since the books had other, significantly worse problems.

I go for the Spoony explanation: the reason why he can't read her thought is that she doesn't have any. Her brain's like a pea rolling around in a drum.
