But when Angel and Spike became not possessed by demons, they didn't become mean super-zombie vampires. They just became non-demon vampires, so I guess none of it makes sense.

They were still possessed by demons or they wouldn't have any powers, tthey got their souls back.

Then why do the zombie vampires have powers? Shouldn't they either be zombies or just dead vampires? Or just dead?

Zombies are dead before the demon enters them, vampires normally pro-create by doing the killing directly, diluting, perhaps, the demonic-ness that enters the human host-body. (We know that vampires are looked upon as weak excuses of monsterdum in the Buffyverse), perhaps the direct-occupying process is ultimately more effective, if not more efficient.
