Generally I love telekinesis, but this is one of the few things comic books do with it that pisses me off. You can't just have someone rearrange molecules with telekinesis to do whatever they want. "Ooh, I'm changing my clothes into other clothes by telekinetically rearranging the molecules! Ooh, I'm turning invisible by telekinetically vibrating my molecules!" I was vaguely okay with Jean doing it back in the day, but that was because she was god-moding pretty hardcore thanks to the Phoenix force. (And even then, it was just changing clothes and Moira McTaggert notes that it's a pretty big deal.) Telekinesis is for moving objects. Let's keep it simple, folks.

I've always liked the idea of Jean trying new things just so the Phoenix can get a good grasp on humanity.
Of course, after Jean tried vegemite, the universe was nearly destroyed in an inferno of rage. Still.

Macro-scale - "Classic" telekinesis, the movement of gross objects. Also can be used to justify things like superstrength to flight.* Micro-scale - Pyrokinesis by accelarating the friction between molecules (just as an example)
Mini-micro-scale (?) - Molecular manipulation and transmutation by affecting the individual structure of atoms and molecules. basically treating protons and electrons like lego bricks and rebuilding them to suit your needs. Completely impossible of course, but we are talking fantasy here.
* Byrne's "Man of Steel" Superman had a strong implication than most of Superman's physical powers came from TK, particularly his ability to fly heavy objects (He could fly with heavier weights than he could lift physically) and why objects he was carrying never collapsed under their own weight.
Though Kal never considered himself to be telekinetic as such, it's why Kon having tactile TK made some sense, he had the same bodywide TK field that Superman had, just used it in a somewhat different manner.
