Firstly it would ruin her image as Marvel's Mom and the most loyal wife in the history of forever even if her husband is...well...Reed. Secondly it would take away all the UST. Once they've done it - it's done. It's kinda like all the people who want to see Wolverine/Jean together. If it ever actually happened - it would never work and be all kinds of awkward later on - as universes where Jean did dump Scott for Logan - in X-Men Forever and Ultimate X-Men (where Jean was sleeping with Logan in the first 5 issue and by the next 5 she had dumped him for good) have shown.
