Best guess, to avoid potential confusion/legal challenges with Helen Parr from The Incredibles, who has the same hero name?
Though Farr and Parr are close as well...

Possibly, given that she was a Famous Movie Star before getting elasticated, her real name is more familiar?

Also, the timeline here is a bit fuzzy anyway, so she may well be calling herself Elasti-Woman at this point.
