I don't think Vader's redemption was ever the focus, it just came up in the last minute.

It was still a core part of the story even if it happened at the end.

When? It wasn't mentioned for more than... once, I think. The some good in him bit. That doesn't seem like something that all the three films were about.

It’s a core part of the final film and the trilogy itself and not something was mentioned just once. That doesn’t mean Vader’s redemption was mentioned in every film (obviously) but the arc was present even if Lucas was making it up as he went along.

"I can fix him" is a term that has very different connotations compared to a son's attempt to bring his father back from the dark side

I’m aware but if anything what Vader did was far worse so I don’t see why Kylo Ren redeeming himself is beyond the pale in comparison.
