So, is that Fu Manchu (or his non union equivalent) as Shang Chi's dad, or is that being jettisoned completely?

Going by the reference to Secret Avengers, it's still Not-Fu Manchu as his dad.

Everything since Secret Avengers to my knowledge has used the Zheng Zu name, it looks from this like Yang and Tan are just revamping who he was up until Shang-Chi's adulthood.

If Shang-Chi is going to recall his childhood, I am surprised Midnight (M'Nai) isn't mentioned. He's Shang-Chi's foster brother.
