I must admit, I am a little confused as to what Merlin's plan actually is.
So it's resurrect Arthur and Galahad as zombies, get grail, kill lots of people, ???, golden age. (Only presumably without the bit where Arthur gets killed by his son and it all goes to crap again. Which, if he's undead, should be easily avoidable this time... hopefully.)

Without the grail Arthur and Merlin die, so essentially Merlin wants the two of them to keep existing and take over England, bringing it back to the Golden Age (which in Arthur's case will be killing everyone who isn't a pure Briton).
I guess Arthur will eventually be killed by his son, but it's better than dying early.
The rest of his plan is to engineer a situation where Galahad, Bors, Lancelot, Percival, and Gawain are together so that they mimic another Grail quest story.
