That’s my understanding that Totems just mean they’re embodying an animal theme. Almost everyone in Spider-Man’s rogues gallery is a totem.

It's a bit unclear how similar to the animal they have to be to qualify. I mean, how like an octopus is Otto without his arms on? Adrian Toomes, however, has a lot of vulture like qualities both in appearance and behavior. Beetle? Probably not. Rhino...yeah, I think he counts.
